Tofu Do Pyaza recipe by Soyuz

Ingredients:
500g Soyuz tofu
60 ml oil
2 dried Red Chillies
2 onions
Salt
Cinnamon bark, small
1 inch Ginger
350g chopped tomatoes
4 cloves Garlic
4 Cloves ( laung)
1 tsp ground Coriander Seeds
1/2 tsp Turmeric Powder
1/2 tsp Kashmiri Mirch
3 tbsp Vegan Yogurt
1 Capsicum
1.5 tsp Kasoori Methi
2 spring onions

Recipe:
1. Drain excess moisture from tofu and cut it into triangles. In a frying pan, heat the oil and then pan fry the triangles. Set them aside.
2. In another kadai, heat more oil for pan frying. Add bay leaves, red chillies, cinnamon, and cloves. Saute for 10–15 mins.
3. Cook some spring onions over medium-low heat for around 10 minutes till they start to caramelize, add minced garlic and ginger julienne. Cook for a few mins.
4. Add tomatoes, coriander seeds, turmeric, cardamom, and salt. Stir for 5 minutes till mixture starts to boil. Add yogurt and still vigorously until it incorporates in the mix on high heat. Continue stirring till it becomes a thick paste.
5. Add onions and peppers. Toss to combine with the masala till they slightly softens. Add the tofu to the pan. Add crushed kasoori methi powder and mix everything.
6. Garnish with spring onion and ginger julienne and serve with rotis or parathas.
